One must not forget the central objective of universities nation wide,
education. It is imperative that NAES support and contribute to baccalaureate
and graduate education in agriculture, biotechnology, human nutrition, and
veterinary medicine. NAES scientists promote excellence in student achievement
and prepare students to effectively contribute and excel in a changing world
through hands-on training both in the classroom and laboratories.
One of the key areas of broadening our students horizons that utilizes Wolfpack
Meats' facilities is training our future scientist in Meat Technology. This
course introduces students to the principles of the conversion of animals to
muscle foods and other products. Topics covered include: processing, packaging,
preservation, and sensory evaluation as influenced by production practices and
how these relate to the consumer and food service industry.
