121 HUMAN NUTRITION (3+0) 3 credits Principles of nutrition and their application to well balanced diets. Four laboratory sessions are included each semester. Prerequisite: Core mathematics requirement, or Corequisite: Math 128 or higher.

201 INTRODUCTION TO DIETETICS (1+0) 1 credit S/U only Introduction to the profession of dietetics, educational preparation, professional opportunities, historical perspective.

205 SPORTS NUTRITION: NUTRITION FOR EXERCISE AND PERFORMANCE (3+0) 3 credits Discussion of nutrient use and requirements with the increased demand of exercise and sports activities and discussion of ways to meet these demands. Prerequisite: one nutrition class.

220 FOOD SERVICE SYSTEMS MANAGEMENT (2+3) 3 credits Organization and operation of food services; management principles; food service personnel; labor laws; regulatory agencies; food cost control; record keeping.

221 QUANTITY FOOD PURCHASING (3+0) 3 credits Food purchasing for food service systems, understanding of cost factors, marketing factors, food laws, quality standards and basic manufacturing processes.

223 PRINCIPLES OF NUTRITION (3+0) 3 credits Nutrient functions and bases for nutrient requirement at the cellular level. Prerequisite: CHEM 121, an organic chemistry class.

325 FOOD AND CULTURE (3+0) 3 credits Determinants of food choices and the meaning of food in the context of various cultures, as they contribute to the establishment of a cultural identity. (Diversity course.)

326 PRINCIPLES OF FOOD SCIENCE (3+0) 3 credits Concentration on the selection of foods and the chemical and physical properties of foods that affect their preparation and acceptability. Prerequisite CHEM 121, 220A.

370, 670 NUTRITION IN THE LIFE CYCLE (3+0) 3 credits Relationship between nutrient needs, development and feeding practices throughout life cycle: pregnancy and lactation, infancy, childhood, adolescence and late life. Prerequisite: NUTR 223

400, 600 SPECIAL PROBLEMS 1 to 5 credits Individual study or research in nutrition. Maximum of 10 credits.

421, 621 READINGS IN FOODS AND NUTRITIONS (2+0) 2 credits Intensive investigation of current research in foods and nutrition through critical evaluation of recent studies. Prerequisite: 15 credits of physical or behavioral science. Maximum of 4 credits.

NUTR 426, 626 MEDICAL NUTRITION THERAPY (2+3) 3 credits Modification of the normal diet for the prevention and treatment of diseases. Prerequisite: NUTR 223. BIOL 223/224 .

427, 627 MEDICAL NUTRITION THERAPY II (2+3) 3 credits Modification of the normal diet for the prevention and treatment of diseases. Prerequisite: NUTR 426.

428, 628 NUTRITION COUNSELING (0+3) 1 credit Application of the principles and techniques involved in interviewing, assessing and providing nutrition counseling. Prerequisite: NUTR 223. Corequisite: NUTR 426,626 or NUTR 427, 627.

451, 651 PRINCIPLES OF HUMAN NUTRITION AND METABOLISM (3+0) 3 credits Major dietary nutrients and their digestion, absorption, metabolism, regulation and role in human disease states. Prerequisite: CHEM 121, 122, an organic chemistry class.

452, 652 ADVANCED NUTRITION (3+0) 3 credits Examination of physiologic/biochemical functions of major nutrients. Prerequisite: NUTR 451.

470, 670 COMMUNITY NUTRITION (2+3) 3 credits Programs, policy, nutrition assessment, planning and evaluation in the community setting. Prerequisite: NUTR 223, NUTR 370.

485, 685 NUTRITION RESEARCH AND CONTEMPORARY ISSUES (1+6) 3 credits Develop and work through a research problem in nutrition. Discuss contemporary research issues including ethics, research design and grantsmanship. Nutrition majors only. (Major capstone course.)

490, 690 COLLEGE NUTRITION TEACHING EXPERIENCE (1+0) 1 credits S/U only Overview of nutrition education methodologies, including evaluation techniques. Prerequisite: limited to junior and senior nutrition majors.

720 PUBLIC HEALTH NUTRITION  (3+0) 3 credits  This course will cover nutrition topics appropriate for the education and training of health professionals, primarily those who will be involved in public health and public health programs.  Prerequisite:  NUTR 223

725 NUTRITION AND HEALTH (3+0) 3 credits Nutrition in various disease states. Focuses on research studies and methodology in the current literature.

726 SEMINAR IN NUTRITION (1 to 2+0) 1 to 2 credits An examination of current nutrition issues and research foci. Maximum of 3 credits.

727 NUTRITION PRACTICUM (0+3 per credit) 1 to 6 credits Selected clinical nutrition experiences with faculty guidance and supervision.

728 FOOD AND NUTRITIONAL TOXICOLOGY (2+0) 2 credits Physiologic and metabolic principles of action of toxicants found in foods. Selective toxicity and detoxification mechanisms and food safety assessment techniques will be stressed. Prerequisite: NUTR 223 and NUTR 451.

729 COLLOQUIUM (1+0) 1 credit Presentation and analysis of original research. Maximum of 4 credits.

730 MACRONUTRIENTS (3+0) 3 credits In-depth review of current research on the functions of macronutrients. Stresses physiologic and biochemical concepts that underlie the metabolic and nutritional relationships of macronutrients. Prerequisites: NUTR 451 or BIOCHEM 400 or consent of the instructor.

732 NUTRITION ASSESSMENT TECHNIQUES (2+3) 3 credits Study of dietary, clinical, biochemical and anthropometric evaluation of nutritional status. Analysis/interpretation of human and animal experiments.

735 MICRONUTRIENTS (3+0) 3 credits Metabolism of micronutrients: absorption, transport, storage, interactions and excretion; historical perspectives, dietary requirements, effects of excesses and deficiencies, role in health and disease. Prerequisites: NUTR 223 and NUTR 452 or consent of the instructor .

795 COMPREHENSIVE EXAMINATION 1 credit S/U only Course is used by graduate programs to administer comprehensive examinations either as end of program comprehensive examinations or as qualifying examinations for doctoral candidates prior to being advanced to candidacy.

796 PROFESSIONAL PAPER (3+0) 3 credits S/U only Required of all students who wish to earn a M.S. in nutrition using the Plan B option.

797 THESIS 1 to 6 credits

799 DISSERTATION 1 to 24 credits

899 GRADUATE ADVISEMENT 1 to 4 credits Provides access to faculty for continued consultation and advisement. No grade is filed and credits may not be applied to any degree requirements. Limited to 8 credits (2 semester enrollment).
