Improving Anti-Oxidants In Nevada's Specialty Beef Market

 

Nutrition and health aspects have become more important to consumers recently. Today’s consumer has changed from buying a commodity at the local super market, to wanting to know where and how their food is produced. Nevada ranchers and farmers in (Elko, Fallon, Carson Valley, etc.) have been asking for assistance in producing beef that appeals to the health conscious consumer. It is the objective of this study to assess better ways to utilize genetic resources and nutrition to benefit producers and more importantly, the consumer. We will be comparing meat traits and fatty acid profiles of Wagyu crossbred and Angus beef cattle fed different dietary regimes to determine what animals have the highest levels of omega-3 fatty acids and CLA.  Read More...
